
Lemon Herb Chicken with Quinoa

Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup quinoa, rinsed
- 2 cups chicken broth
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped parsley for garnish
Steps
- Preheat oven to 400°F (200°C)
- In a bowl, mix olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper
- Place chicken breasts in a baking dish and pour marinade over them
- Let it sit for 15 minutes
- While the chicken marinates, combine quinoa and chicken broth in a saucepan
- Bring to a boil
- Reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy
- Bake marinated chicken for 25-30 minutes, until cooked through
- Fluff quinoa with a fork and season with salt and pepper
- Serve chicken over quinoa and garnish with chopped parsley
