Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup quinoa, rinsed
  • 2 cups chicken broth
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish

Steps

  1. Preheat oven to 400°F (200°C)
  2. In a bowl, mix olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper
  3. Place chicken breasts in a baking dish and pour marinade over them
  4. Let it sit for 15 minutes
  5. While the chicken marinates, combine quinoa and chicken broth in a saucepan
  6. Bring to a boil
  7. Reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy
  8. Bake marinated chicken for 25-30 minutes, until cooked through
  9. Fluff quinoa with a fork and season with salt and pepper
  10. Serve chicken over quinoa and garnish with chopped parsley
