Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Steps

  1. Heat olive oil in a large pot over medium heat
  2. Sauté the onion and garlic until softened, about 3 minutes
  3. Add bell pepper and zucchini, cooking for another 5 minutes
  4. Stir in the quinoa, vegetable broth, cherry tomatoes, oregano, salt, and pepper
  5. Bring to a boil, then reduce heat to low and cover
  6. Simmer for 15-20 minutes until quinoa is cooked and liquid is absorbed
  7. Fluff with a fork and let it sit for 5 minutes
  8. Garnish with fresh parsley before serving
