Ingredients
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Steps
- Heat olive oil in a large pot over medium heat
- Sauté the onion and garlic until softened, about 3 minutes
- Add bell pepper and zucchini, cooking for another 5 minutes
- Stir in the quinoa, vegetable broth, cherry tomatoes, oregano, salt, and pepper
