A refreshing and healthy dessert made with chia seeds and mixed berries.
Ingredients
- 2 cups almond milk
- 1/2 cup chia seeds
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- Mint leaves for garnish
Steps
- In a mixing bowl, combine almond milk, chia seeds, maple syrup, and vanilla extract
- Whisk the mixture until well combined and the chia seeds are evenly distributed
- Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to expand
- Once set, stir the chia pudding to break up any clumps
- Layer the pudding in serving glasses with mixed berries in between layers
- Top each glass with additional berries and a sprig of mint
- Serve chilled and enjoy your healthy dessert!
