Ingredients
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- 1 cup spinach (optional)
- Zucchini noodles or shirataki noodles (for serving)
Steps
- Heat olive oil in a skillet over medium heat
- Season chicken breasts with salt and pepper, then add to the skillet
- Cook chicken for 6-7 minutes on each side until cooked through, then remove from skillet and slice
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant
- Pour in heavy cream and bring to a simmer, stirring frequently
- Add Parmesan cheese and Italian seasoning, stirring until cheese is melted and sauce thickens
- If using, stir in spinach until wilted
- Add sliced chicken to the sauce and mix well
