Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1 cup spinach (optional)
  • Zucchini noodles or shirataki noodles (for serving)

Steps

  1. Heat olive oil in a skillet over medium heat
  2. Season chicken breasts with salt and pepper, then add to the skillet
  3. Cook chicken for 6-7 minutes on each side until cooked through, then remove from skillet and slice
  4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant
  5. Pour in heavy cream and bring to a simmer, stirring frequently
  6. Add Parmesan cheese and Italian seasoning, stirring until cheese is melted and sauce thickens
  7. If using, stir in spinach until wilted
  8. Add sliced chicken to the sauce and mix well
  9. Serve over zucchini noodles or shirataki noodles
  10. Garnish with additional Parmesan if desired
