Ingredients
- 4 chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups broccoli florets
- 1 cup cherry tomatoes
- 1 cup bell peppers, chopped
Steps
- Preheat oven to 400°F (200°C)
- In a large bowl, mix olive oil, garlic, lemon juice, oregano, salt, and pepper
- Add chicken breasts to the bowl and coat them well in the marinade
- Place the marinated chicken in a baking dish
- Add broccoli, cherry tomatoes, and bell peppers around the chicken in the dish
- Drizzle any remaining marinade over the vegetables
- Bake for 25-30 minutes or until chicken is cooked through and vegetables are tender
- Remove from oven and let rest for 5 minutes before serving
