Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 2 lemons (juiced)
  • 4 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups broccoli florets
  • 2 cups baby carrots

Steps

  1. Preheat the oven to 400°F (200°C)
  2. In a large bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper
  3. Add chicken breasts to the bowl and coat them well with the marinade
  4. Arrange the chicken on a large baking sheet
  5. Spread the broccoli and carrots around the chicken
