Ingredients
- 4 chicken breasts
- 2 lemons (juiced)
- 3 tablespoons olive oil
- 2 cloves garlic (minced)
- 1 tablespoon fresh rosemary (chopped)
- 1 tablespoon fresh thyme (chopped)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup quinoa
- 2 cups vegetable broth
- 2 cups mixed vegetables (broccoli, carrots, bell peppers)
Steps
- In a bowl, mix lemon juice, olive oil, garlic, rosemary, thyme, salt, and pepper
- Add chicken breasts to the marinade and coat well
- Let it marinate for at least 15 minutes
- While chicken marinates, rinse quinoa under cold water
- In a saucepan, combine quinoa and vegetable broth, bring to a boil
- Reduce heat, cover, and simmer for 15 minutes until liquid is absorbed
- In a steamer or microwave, steam mixed vegetables until tender
- Preheat grill or skillet over medium heat
- Grill chicken for 6-7 minutes on each side until cooked through
- Fluff quinoa with a fork and serve with grilled chicken and vegetables
