Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 2 lemons (juice and zest)
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup fresh parsley, chopped

Steps

  1. Marinate chicken breasts in olive oil, lemon juice, lemon zest, oregano, garlic powder, salt, and pepper for at least 15 minutes
  2. Cook quinoa in vegetable broth according to package instructions; fluff with a fork once done
