  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups spinach, chopped

Steps

  1. Heat olive oil in a large pot over medium heat
  2. Add chopped onion, carrots, and celery; sauté until softened, about 5 minutes
  3. Stir in minced garlic and cook for an additional minute
  4. Add zucchini and bell pepper; cook for 3-4 minutes until slightly tender

  7. Reduce heat and simmer for 20 minutes to allow flavors to meld
  8. Stir in chopped spinach and cook for another 5 minutes until wilted
