Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup spinach, fresh
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup parmesan cheese, grated
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • Fresh basil for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat
  2. Add minced garlic and sauté until fragrant, about 1 minute
  3. Add shrimp to the skillet and cook until pink, about 2-3 minutes per side
  4. Remove shrimp and set aside
  5. In the same skillet, pour in heavy cream and bring to a simmer

  8. Season with salt, pepper, and Italian seasoning
  9. Return shrimp to the skillet and toss to coat in the sauce
  10. Cook for an additional 2 minutes
  11. Remove from heat and garnish with fresh basil before serving
  12. Serve warm with a side of zucchini noodles or cauliflower rice
