Ingredients
- 1 cup lentils, rinsed
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon thyme
- 6 cups vegetable broth
- 1 can diced tomatoes
- 2 cups spinach, chopped
- Salt and pepper to taste
Steps
- Heat olive oil in a large pot over medium heat
- Add onion, carrots, and celery; sauté until softened, about 5 minutes
- Stir in garlic, cumin, and thyme; cook for another minute
- Add lentils, vegetable broth, and diced tomatoes to the pot
- Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender
