Ingredients
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 avocado, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Steps
- In a saucepan, combine quinoa and vegetable broth
- Bring to a boil
- Reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy
