Ingredients
- 12 oz pasta of choice
- 2 cups vegetable broth
- 1 cup heavy cream
- 8 oz mushrooms, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 cup spinach, fresh
- 1/2 cup grated parmesan cheese (optional)
Steps
- In a large pot, sauté onion and garlic until translucent
- Add mushrooms and cook until softened
- Stir in the pasta, vegetable broth, heavy cream, thyme, salt, and pepper
- Bring to a boil, then reduce heat and simmer until pasta is cooked, about 10-12 minutes
- Add fresh spinach and stir until wilted
- Remove from heat and stir in parmesan cheese if using
