Ingredients

  • 1 pound chicken breast, cubed
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Steps

  1. Heat olive oil in a large pot over medium heat
  2. Add chopped onion and minced garlic; sauté until softened
  3. Stir in cubed chicken and cook until browned
  4. Add rice, chicken broth, mixed vegetables, paprika, thyme, salt, and pepper
  5. Bring to a boil, then reduce heat to low and cover
  6. Simmer for 20 minutes or until rice is cooked and liquid is absorbed
  7. Remove from heat and let sit, covered, for 5 minutes
  8. Fluff rice with a fork before serving
