A colorful and fresh pasta dish loaded with seasonal vegetables.
Ingredients
- 12 oz pasta
- 2 tbsp olive oil
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Parmesan cheese, grated (optional)
Steps
- Cook pasta according to package instructions; drain and set aside
- In a large skillet, heat olive oil over medium heat
- Add bell pepper and zucchini; sauté for 3-4 minutes until slightly tender
- Stir in cherry tomatoes and garlic; cook for another 2 minutes
- Add cooked pasta to the skillet; toss to combine
- Sprinkle with Italian seasoning, salt and pepper; mix well
- Cook for an additional 2 minutes to heat through
- Serve warm, topped with grated Parmesan cheese if desired
