Ingredients
- 12 ounces pasta of choice
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups broccoli florets
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for serving
Steps
- Heat olive oil in a large pot over medium heat
- Add diced onion and garlic; sauté until fragrant
- Stir in broccoli, bell pepper, and zucchini; cook for 5 minutes
