Ingredients
- 4 boneless, skinless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Steps
- Heat olive oil in a large pot over medium heat
- Season chicken thighs with salt and pepper, then add them to the pot
- Brown the chicken for about 5 minutes on each side, then remove and set aside
- In the same pot, add chopped onion and sauté until translucent, about 3 minutes
