A flavorful and easy one-pot pasta dish infused with garlic and herbs.
Ingredients
- 12 oz pasta of choice
- 4 cups vegetable broth
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach, fresh
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt, to taste
- Pepper, to taste
- 2 tbsp olive oil
- Parmesan cheese, for serving (optional)
Steps
- Heat olive oil in a large pot over medium heat
- Add diced onion and sauté until translucent, about 5 minutes
- Stir in minced garlic and cook for another minute
- Add the pasta, vegetable broth, cherry tomatoes, oregano, basil, salt, and pepper
- Bring to a boil, then reduce heat and cover, simmer for 10-12 minutes until pasta is cooked
- Stir in fresh spinach until wilted
- Remove from heat and let it sit for 2 minutes to thicken slightly
- Serve warm, topped with Parmesan cheese if desired
