Ingredients
- 4 chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 cup cherry tomatoes
Steps
- Preheat oven to 400°F (200°C)
- In a large bowl, combine olive oil, minced garlic, lemon juice, oregano, salt, and pepper
- Add chicken breasts to the bowl and coat them well with the marinade
- Let sit for 10 minutes
- Arrange the marinated chicken on a baking sheet
- Add broccoli, bell pepper, and cherry tomatoes around the chicken on the baking sheet
- Drizzle any remaining marinade over the vegetables
- Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender
- Remove from the oven and let rest for 5 minutes before serving
